En Ecuador, la mayor\u00eda de las veces que uno quiere comer hornado, se va a un restaurante o a uno de los lugares que se especializan en hornado como los mercados o el conocido Sangolqui en las afueras de Quito.<\/p>\n\n\n\n<p>Si se lo prepara en casa es para un ocasi\u00f3n especial, como Navidad\/A\u00f1o Nuevo o una reuni\u00f3n familiar importante. Esta receta es ideal para los que est\u00e1n fuera de Ecuador y quieren preparar hornado para las fiestas, para los que estamos en Norteam\u00e9rica es una buena opci\u00f3n para darle un toque latino a su men\u00fa de Thanksgiving o Dia de Acci\u00f3n de Gracias.<\/p>\n\n\n\n<p>La preparaci\u00f3n tradicional del hornado se hace con chicha de ma\u00edz y se lo hornea al chancho entero en un horno de le\u00f1a. Sue\u00f1o con el d\u00eda que podre tener mi propio horno de le\u00f1a y poder hornearlo as\u00ed entero. Obviamente, la pierna tiene m\u00e1s cuero, pero la espaldilla tambi\u00e9n tiene un poco. En Ecuador, suelen rociar la piel con agua helada al final para que reviente. Tambi\u00e9n se usa una especie de antorcha para quemar el cuero, luego lo raspan para quitarle lo quemado y quedan las cascaritas crujientes.<\/p>\n\n\n\n<p>Para esta receta puede encender la parilla superior del horno (llamado broiler en ingles) durante los \u00faltimos minutos y luego usar un cuchillo para raspar las partes negritas. Luego baje la temperatura del horno a 325F.<\/div><\/li><li id=\"wprm-recipe-8806-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cuando el l\u00edquido de la bandeja se empiece a reducir derrita las 2 onzas restantes de mantequilla o manteca a fuego lento. Agregue las 2 tazas de cerveza y la cucharada restante de achiote molido, cali\u00e9ntelo pero no deje que hierva. Use esta mezcla  seg\u00fan sea necesario para seguir ba\u00f1ando la carne de chancho.<\/div><\/li><li id=\"wprm-recipe-8806-step-0-12\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Contin\u00fae horneando y ba\u00f1ando la carne durante 1 \u00bd hora. En este momento puede agregar las papas y asarlas con la carne durante una hora m\u00e1s.<\/div><\/li><li id=\"wprm-recipe-8806-step-0-13\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">El tiempo total de cocci\u00f3n es alrededor de 4 \u00bd horas para una pierna de cerdo 8 -10 libras, m\u00e1s o menos son 25-30 minutos por libra.
