La mayor\u00eda de los restaurantes o locales de comida que venden hornado tienen sus propias variaciones de la receta. Algunos lo preparan con chicha, otros con naranja agria, y algunos hasta le ponen cerveza. El agrio tambi\u00e9n lleva tomates picados, cebolla paite\u00f1a (puede usar chalotes o cebolla colorada), cebollines o la cebolla de tallo verde, aji picante o pimiento dulce (de acuerdo a su gusto), perejil y cilantro. El agrio se pone m\u00e1s rico despu\u00e9s de guardarse unas horas en la refrigeradora.
