El m\u00e9todo original, que es pre-Incaico, para preparar la chicha era masticando el ma\u00edz en la boca, y luego escupiendo el ma\u00edz masticado en una olla de barro con especias, jugo de frutas, agua y hierbas arom\u00e1ticas, donde se dejaba fermentar por varios d\u00edas. Pero tranquilos, y antes de que digan atatay, que el m\u00e9todo moderno usa harina de ma\u00edz molida (en vez de masticada). <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Fritada-de-gallina-con-platillos-acompanantes.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p>Puede usar presas de pollo con o sin la piel, ambas quedan deliciosas. En esta receta no se agrega aceite o grasa, as\u00ed que me gusta poner algunas presas con la piel para que la grasa natural ayude a dorar la carne. Pero aun las presas sin piel tienen alguito de grasa que no necesita agregarle nada. La receta original le agrega un poco de manteca de chancho cuando se ha reducido el liquido. Personalmente me encanta cocinar con manteca, pero me pareci\u00f3 que esta receta no lo necesita, si a usted le parece que necesita un poco mas le puede poner un poco de manteca, o si no le gusta usar manteca puede usar mantequilla. <\/p>\n\n\n\n<p>El libro de cocina de Michelle O. Fried tiene una receta para preparar chicha de jora, pero estuve demasiado carishina para preparar chicha casera. A veces se puede encontrar chicha en los supermercados latinos, y la primera vez que prepare esta fritada lo hice con chicha. Las otras veces he experimentado para encontrar con que ingredientes se puede sustituir la chicha. Mi remplazo favorito para la chicha es una mezcla de vino blanco, jugo de naranja y especia. Una mezcla de cerveza, jugo de naranja y especias tambi\u00e9n da buenos resultados. Obviamente estos remplazos son parte de mi segunda estrategia carishina.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Fritada-de-pollo-con-llapingachos-y-platanos-maduros.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p>Recomiendo usar una variedad de presas diferentes, aseg\u00farese de usar algunas que tengas huesitos, ya que siempre le dan mas sabor a la comida (y a quien no le gusta chuparse un huesito). La receta original tambi\u00e9n menciona que se puede preparar la fritada de esta manera usando conejo o cuy en vez de gallina.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Curtido-de-tomate-y-cebolla-con-llapingachos.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p>Me gusta decir que esta es mi versi\u00f3n carishina de la fritada de gallina. Carishina es una palabra quechua que se usa para describir a una mujer que no es tan buena para las tareas domesticas, en especial para la cocina.  Carishina quiere decir que te tomas atajos y no sigues las reglas al pie de la letra. <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Llapingachos-para-acompanar-la-fritada.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p>Admito que hago muchas cosas a la carishina en la cocina: no siempre le quito las semillas de los tomates o pepinos, no me gusta pelar los chochos, preparo mayonesa en la licuadora, y odio lavar los platos. Y para que si no le cambia el sabor? (Y ni me digan que la semillas har\u00e1n que me crezca una planta en el estomago) Mi forma de cocinar es tratar de ser lo mas eficiente posible sin sacrificar el sabor, y si me puedo tomar atajos que Agregue los dientes de ajo enteros y los trozos de cebolla blanca.<\/div><\/li><li id=\"wprm-recipe-9417-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cocine a fuego medio, el liquido debe estar hirviendo la mayor parte del tiempo, durante  1 \u00bd horas o hasta que el liquido se empiece a reducir, revuelva ocasionalmente.<\/div><\/li><li id=\"wprm-recipe-9417-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cocine durante 30 minutos m\u00e1s, pero ahora si revolviendo con m\u00e1s frecuencia para evitar que la carne se peque o se queme.<\/div><\/li><li id=\"wprm-recipe-9417-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Reduzca la temperatura a fuego bajo cuando el l\u00edquido se haya evaporado por completo y quede remplazado por la grasa (natural) del pollo.
