Con la fiebre del petroleo, a principios del siglo XIX, vinieron a Am\u00e9rica Latina muchas compa\u00f1\u00edas estadounidenses e inglesas para explotar los hidrocarburos. Las trabajadoras ecuatorianas preparaban guisos con carnes como chivo y cabrito para los trabajadores; y ellas notaron que los ingleses se refer\u00edan a estos platillos como \u201csecond\u201d que indicaba el segundo plato para ellos. Sin embargo, ellas asumieron que se refer\u00edan a los guisos. De esta manera, el vocablo fue degener\u00e1ndose a \u201cseco\u201d, us\u00e1ndose para definir a estos guisos. Si bien, los m\u00e1s comunes son de carne y <a href=\"https:\/\/laylita.com\/recetas\/seco-de-pollo-ecuatoriano\/\">pollo<\/a>; tambi\u00e9n existe el seco de <a href=\"https:\/\/laylita.com\/recetas\/seco-de-chivo\/\">chivo<\/a>, <a href=\"https:\/\/laylita.com\/recetas\/seco-de-borrego\/\">cordero<\/a>, y cabrito. Tambi\u00e9n se puede preparar seco de pato, de chancho (cerdo), y hasta seco de pescado. Hoy en d\u00eda tambi\u00e9n se puede preparar un seco vegetariano con champi\u00f1ones o berenjena.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Diferencias entre el seco ecuatoriano y el seco peruano<\/h2>\n\n\n\n<p>Una de las diferencias principales entre el seco ecuatoriano y el seco peruano, es que al seco ecuatoriano no se le agrega papas, zanahoria o arvejas. El seco es solamente la carne cocida en el jugo de los vegetales licuados (en Ecuador si el guiso tiene papas, zanahorias, etc se lo considera un estofado). En Ecuador, se puede usar chicha, pero tambi\u00e9n se le agrega jugo de <a href=\"https:\/\/www.laylita.com\/recetas\/naranjilla-o-lulo\/\">naranjilla<\/a>, que le da un toque frutal al seco. En Per\u00fa, el seco es picante, mientras que en Ecuador no se cocina el seco con aj\u00ed picante (al menos que sea al gusto del cocinero), pero se sirve el plato final con <a
