El vocablo \u00abVizca\u00edna\u00bb es un adjetivo usado para referirse a algo que es originario o propio de Vizcaya, una provincia espa\u00f1ola situada en el Pa\u00eds Vasco. De modo que el nombre significa bacalao al estilo vasco. Y te preguntar\u00e1s, \u00bfqu\u00e9 es el estilo vasco? Naturalmente, surgi\u00f3 un excedente de pescado y los pobladores se dispusieron a usarlo de todas las formas posibles y se dice que as\u00ed naci\u00f3 el famoso bacalao a la vizca\u00edna. Si no lo haces, el resultado es catastr\u00f3fico. Si el bacalao es muy grande, puedes cortarlo en trozos m\u00e1s peque\u00f1os para que sea m\u00e1s f\u00e1cil de manejar. Gu\u00e1rdalo tapado dentro de la nevera.&nbsp;<\/li>\n\n\n\n<li>Cada 8 horas, ret\u00edralo de la nevera y cambia el agua; podr\u00edas acelerar un poco el proceso cambiando el agua cada cuatro horas. De este modo eliminar\u00e1s la mayor cantidad de sal.&nbsp;<\/li>\n\n\n\n<li>Generalmente, el proceso de desalar toma entre 24 y 48 horas; sin embargo, tambi\u00e9n depende del tama\u00f1o y grosor de cada pieza. Si son muy gruesas, no temas cortarlas. Para saber si est\u00e1 listo, prueba un pedacito de bacalao y verifica si todav\u00eda est\u00e1 muy salado. Si no quieres probarlo sin cocer puedes cocinar un pedazo peque\u00f1o con un poquito de aceite de oliva para verificar el sabor. Aunque el bacalao salado se considera curado y no como un pescado crudo.&nbsp;<\/li>\n\n\n\n<li>Despu\u00e9s de desalar el bacalao, aseg\u00farate de que est\u00e9 completamente seco antes de cocinarlo. La receta original vasca usa pimientos choriceros, pero suelen ser dif\u00edciles de encontrar fuera de Espa\u00f1a.
