La preparaci\u00f3n de esta receta coste\u00f1a es sencilla, f\u00e1cil y r\u00e1pida. Es simplemente cuesti\u00f3n de preparar un buen refrito (sofrito) con aceite de color o <a href=\"https:\/\/www.laylita.com\/recetas\/achiote-onoto-bija-anato\/\">achiote (onoto, anato, bija, uruc\u00fa)<\/a>, cebolla, ajo, pimiento verde, tomate, y cilantro. Los trozos de verde se cocinan aparte ya que se demoran m\u00e1s tiempo que el pescado. Seg\u00fan su gusto los puede agregar junto con el pescado o al final. Lo que mas se suele usar para el sudado es el dorado, la corvina, el picudo, el bocachico \u2013 este \u00faltimo se usa especialmente si se prepara el pescado entero. Para los que est\u00e1n fuera del Ecuador tambi\u00e9n queda muy bien esta receta con halibut, red snapper (pargo o huachinango), robalo, merluza, y hasta con bacalao fresco (que se encuentra mucho en Europa). La preparaci\u00f3n es muy similar, pero su cocci\u00f3n se demora un poco m\u00e1s de tiempo.<\/li>\n\n\n\n<li><strong>Con el refrito licuado<\/strong>: Para esta variaci\u00f3n r\u00e1pida del sudado, los ingredientes del refrito o sofrito (cebolla, ajo, tomate, pimiento) se licuan primero. Luego se sofr\u00ede en un poco de aceite, se agregan los filetes de pescado, y se deja cocinar durante aproximadamente 10 minutos (m\u00e1s o menos seg\u00fan el espesor de los filetes de pescado). Se sirve con arroz y pl\u00e1tanos maduros fritos o patacones.<\/li>\n\n\n\n<li><strong>Con man\u00ed<\/strong>: Esta preparaci\u00f3n del sudado lleva man\u00ed (cacahuate) en pasta o licuado con un poco de leche.<\/li>\n\n\n\n<li><strong>Con mariscos variados<\/strong>: Se puede reemplazar el pescado por conchas prietas, camarones, calamar, cangrejo, mejillones, y otros mariscos.<\/li>\n\n\n\n<li><strong>Estilo peruano<\/strong>: El sudado de pescado peruano se prepara con aj\u00ed amarillo y a veces tambi\u00e9n aj\u00ed rocoto. Esta variaci\u00f3n tambi\u00e9n le agrega chicha de jora y se sirve con yuca.<\/li>\n\n\n\n<li><strong>Estilo colombiano<\/strong>: Esta variaci\u00f3n suele llevar papas. El arroz es el acompa\u00f1ante ideal ya que absorbe el juguito del sudado de la mejor forma.
