Posiblemente espa\u00f1ol, aunque en la actualidad tambi\u00e9n es com\u00fan en la gastronom\u00eda de Francia, Italia, Portugal y Alemania. Los cortes magros de res estaban reservados para la nobleza, y todas las v\u00edsceras, consideradas en aquel entonces como desperdicios, eran para los pobres y los campesinos. Y comenz\u00f3 su venta en carnicer\u00edas y mercados. Aunque se mantuvo constante el hecho de ser mucho m\u00e1s accesible, que otros cortes de carne. Y lejos de los tab\u00faes sociales, las v\u00edsceras aportan un giro de tuerca impresionante a la gastronom\u00eda de muchos pa\u00edses. Permiten a los cocineros hacerse de sabores nuevos y diferentes, a muy bajo costo. De hecho, las v\u00edsceras son protagonistas de diversos platos t\u00edpicos. No golpeaba el bolsillo, y era perfecto para ayudar a subir la hemoglobina. Luego de la guerra, las condiciones eran m\u00e1s favorables, sobre todo en pa\u00edses como Argentina o Uruguay que tienen una enorme industria ganadera, pero la costumbre de preparar h\u00edgado encebollado ya hab\u00eda sido arraigada culturalmente, y se sigue preparando en muchos lugares. Adem\u00e1s del h\u00edgado, cebollas y sal, se le agrega cilantro y perejil. El acompa\u00f1ante ideal, es un arroz blanco.<\/li>\n\n\n\n<li>Ecuador: Se conoce como bistec de h\u00edgado y lleva cebolla, pimientos (rojos\/verdes), tomate, y ali\u00f1ado con ajo, comino, achiote, cilantro\/perejil. Se sirve con arroz y patacones.<\/li>\n\n\n\n<li>Francia: El h\u00edgado se fr\u00ede en mantequilla y se combina con tocino. En este caso, al igual que en Espa\u00f1a, el pur\u00e9 de papas es la guarnici\u00f3n m\u00e1s frecuente.&nbsp; &nbsp;<\/li>\n\n\n\n<li>Italia: Los italianos utilizan muchas especias para este plato: pimienta, laurel, romero y hasta nuez moscada figuran en la lista. Adem\u00e1s, marinan el h\u00edgado con vino tinto.<\/li>\n\n\n\n<li>M\u00e9xico: El famoso h\u00edgado a la mexicana, se guisa en una salsa de fuertes condimentos con tomate y cebolla.
