Trato de recordar mi primer encuentro con un pulpo, lo saqu\u00e9 de la bolsa y lo puse en el lavaplatos. Esto es muy necesario porque no existe un protocolo entre las pescader\u00edas respecto a como debe ser un \u201cpulpo limpio\u201d. Debes tomar los tent\u00e1culos del pulpo uno por uno y revisar que no tengan ning\u00fan rastro de suciedad incrustado en las ventosas. Si es as\u00ed presiona suavemente la ventosa para sacarlos y enjuaga nuevamente.<\/p>\n\n\n\n<p>Con los tent\u00e1culos limpios, pasa a revisar el pico. El pico no es m\u00e1s que la boca del pulpo; esta justo bajo su cabeza en el centro de los tent\u00e1culos. Puedes voltear la cabeza del pulpo como si fuese una media. Con mucho cuidado jala todas las v\u00edsceras que encuentres en el lugar y desc\u00e1rtalas. Si buscas con cuidado podr\u00e1s encontrar la bolsa de tinta. Esta \u00faltima la puedes reservar en caso que desees preparar una receta como el \u201cpulpo en su tinta\u201d. Cr\u00e9eme, a pesar de su impresionante aspecto, la tinta del pulpo tiene un sabor muy rico.<\/p>\n\n\n\n<p>Finalizado todo este proceso, enjuaga el pulpo y ahora si esta listo. Como dije al principio, muchas veces, ya tu pescadero habr\u00e1 hecho todo esto por ti, pero siempre debes inspeccionarlo primero.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfCu\u00e1nto tiempo debo cocinar el pulpo?<\/h2>\n\n\n\n<p>He visto muchas recetas que indican cocinar el pulpo por tres cuartos de hora; probablemente esto aplica para pulpos grandes (superiores a 2 Kg). En mi experiencia, nunca he cocinado un pulpo por m\u00e1s de veinte minutos. La carne de res con m\u00e1s tiempo de cocci\u00f3n es m\u00e1s blanda, el pulpo, por el contrario, con m\u00e1s tiempo de cocci\u00f3n adquiere una textura de goma dura muy desagradable. La singular frase hace referencia a que no cocinas el pulpo inmediatamente, solo le das un susto.<\/p>\n\n\n\n<p>Yo soy curiosa en la cocina, y un d\u00eda decid\u00ed que quiz\u00e1 esto no era tan necesario, y que si yo colocaba todo el pulpo de una vez en la olla tambi\u00e9n se cocinar\u00eda bien y m\u00e1s r\u00e1pido. Pero \u00a1oh sorpresa! No se\u00f1or, algunos tent\u00e1culos quedan enrollados muy bonitos, mientras otros quedan rectos\u2026 el aspecto final no es nada agradable. Obvio que me com\u00ed aquel pulpo sin asustar, pero m\u00e1s nunca me salte el famoso paso del susto.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfCu\u00e1les son los condimentos ideales para cocinar el pulpo?<\/h2>\n\n\n\n<p>Desde ni\u00f1a ve\u00eda que mi abuela agregaba una hoja de laurel y algunos granos de pimienta guayabita al agua donde cocinar\u00eda el pulpo. Si no tienes estos condimentos a la mano, no te preocupes; lo \u00fanico que, si recomiendo con obligatoriedad es no agregar sal al agua, porque tiende a endurecer la carne del
