Como la mayor\u00eda de feriados en Ecuador \u2013 y Latinoam\u00e9rica, la Semana Santa tiene una conexi\u00f3n importante con la comida. El plato mas importante de la Semana Santa en Ecuador es una sopa espesa llamada fanesca. La tradici\u00f3n es comer la fanesca el Jueves Santos, como la Ultima Cena, pero hoy en d\u00eda se ha vuelto un plato muy popular que se puede encontrar durante la semana entera en muchos restaurantes ecuatorianos. La fanesca se prepara con bacalao seco y una selecci\u00f3n de diferentes granos y verduras de la sierra ecuatoriana. Esta sopa requiere de un poco de preparaci\u00f3n de antemano: hay que pelar y cocinar los granos, remojar el bacalao por 24 horas, los granos y verduras se cocinan por separado. La parte final de agregar todos los ingredientes juntos para cocinar la fanesca es en realidad la parte m\u00e1s f\u00e1cil de la preparaci\u00f3n.<!--more--><\/p>\n<p><span style=\"color: #0000ff;\"><a title=\"Easter in Ecuador\" href=\"https:\/\/www.laylita.com\/recipes\/2012\/04\/01\/easter-in-ecuador\/%20\"><span style=\"color: #0000ff;\">In English<\/span><\/a><\/span><\/p>\n<p>Dicen que la fanesca debe llevar por lo menos 12 granos y verduras, ya que representan a los 12 disc\u00edpulos, y que el pescado representa a Jes\u00fas. Hay un poco de debate en torno al origen de la fanesca, algunos creen que se origino en Ecuador durante los tiempos coloniales, otros creen que se origino en Espa\u00f1a (o Portugal) y fue un plato introducido a Ecuador por los espa\u00f1oles. Tambi\u00e9n dicen que se pudo originar debido a que la \u00e9poca de la cosecha de los granos y verduras coincid\u00eda con la Cuaresma y Semana Santa. Mi teor\u00eda personal (sin ninguna verificaci\u00f3n) es que la fanesca es una variaci\u00f3n de alguno plato de los tiempos incaicos, o hasta pre-incaicos, que se preparaban para celebrar la cosecha o la fertilidad de la tierra. Seguramente se agreg\u00f3 el bacalao seco durante los tiempos de la Colonia, y lo de asociar la cantidad de granos con los disc\u00edpulos es una manera de justificar la fusi\u00f3n de una costumbre de origen pagana con una costumbre cat\u00f3lica. Solo mi teor\u00eda que trata de reconstruir los pedazos de rompecabezas acerca del origen de la fanesca. La comida entera puede ser un poco pesada, por lo cual a veces prefiero servir un postre mas ligero y refrescante como el come y bebe o ensalada de frutas. Por una parte me encantaba ayudar con la preparaci\u00f3n de la fanesca y las humitas, a los ni\u00f1os siempre nos tocaba ayudar a pelar y desgranar los porotos y los choclos. Pero el Domingo de Pascuas tambi\u00e9n recib\u00eda una canasta con chocolates del conejito de Pascuas. Ahora estoy en la misma situaci\u00f3n, pero al rev\u00e9s, viviendo con mis hijos en EEUU. Obviamente son expertos en cuestiones del conejo de Pascuas, pero es muy importante para m\u00ed que aprendan el verdadero significado de este feriado y que aprecien las tradiciones con las que crec\u00ed en Ecuador. La comida es una excelente manera de ensenarles a los ni\u00f1os acerca de las costumbres y tradiciones de nuestro pa\u00eds, en especial si se los hace participar en el proceso de preparar estos
