Cuando estaba planeando preparar esta receta iba a usar\u00a0cerveza, pero para mi grata sorpresa encontr\u00e9 chicha en una tienda de productos latinos &#8211; importada de Per\u00fa. El sabor es un poco mas especiada y dulce que la fresca que sirven en Ecuador, pero para hacer este seco\u00a0resulto perfecta porque el sabor de la carne de chivo combina muy bien con el sabor de la chicha.<\/p>\n\n\n\n<p>Tambi\u00e9n le puse un poco de jugo de naranjilla porque me encanta el sabor que le da (para la pr\u00f3xima lo hago con cerveza). Lo m\u00e1s importante con el seco de chivo, y la carne de chivo o cabrito, es prepararlo correctamente para que no tenga ese sabor fuerte a chivo o cabra (como el que tiene el queso de cabra), el sabor del seco de chivo debe ser menos fuerte que el sabor de carne de borrego, tambi\u00e9n es importante cocinarlo por un buen tiempo y a fuego lento para que la carne se ablande.
