Hay muchos lugares en los mercados de la Sierra que se especializan en el hornado. Por lo general hornean el chancho o cerdo entero en un horno hecho de arcilla o lodo. Se me hace muy dif\u00edcil comer hornado de chancho sin estar acompa\u00f1ado de mote, el curtido de cebollas, el agrio, o aguacate. Cuando lo preparo suelo agregar papas enteras a hornear junto al hornado durante las \u00faltima horas en el horno. Las papas se pueden servir directamente con el hornado o se las puede usar para preparar tortillas de papas o llapingachos. Esta es la manera de lograr que todos los sabores de los condimentos sean absorbidos por la carne, pero tambi\u00e9n se puede dejarlo marinar por solo un d\u00eda o hasta un par de horas. Una pierna de chancho de 20 libras se demora aproximadamente 7-8 horas en hornearse. Para darle ese color rojizo intenso tambi\u00e9n se puede agregar un poco de achiote molido a esta mezcla. Lo puede preparar en la licuadora con una taza de cerveza.<\/div><\/li><li id=\"wprm-recipe-10928-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Roc\u00ede la pierna de chancho con el jugo de lim\u00f3n<\/div><\/li><li id=\"wprm-recipe-10928-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Haga varias incisiones de buen tama\u00f1o en la pierna de chancho y rellene las incisiones con el ali\u00f1o. Se pueden hacer incisiones en la piel, ya sea en forma horizontal, vertical, o en cruz, o se puede dejar la piel intacta si lo prefiere.<\/div><\/li><li id=\"wprm-recipe-10928-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Agrega la cerveza (o chicha o la mezcla de cerveza con sidra y jugo de naranja), cubra y deje reposar en al refrigeradora por 24 a 72 horas. Puede voltear la pierna de vez en cuando para que marine bien por todas partes.<\/div><\/li><li id=\"wprm-recipe-10928-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pre-caliente el horno a 400 F (200C).<\/div><\/li><li id=\"wprm-recipe-10928-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Ponga la pierna, con el lado de la piel hacia arriba, en la fuente de hornear con la mezcla de la marinada (saquela de la funda si la uso), y use toallitas de papel para secar bien la piel.<\/div><\/li><li id=\"wprm-recipe-10928-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En una olla peque\u00f1a derrita 4 oz de mantequilla (o manteca) con una cucharada de achiote, tambi\u00e9n puede ponerle un poco de sal si lo desea. Ba\u00f1e la pierna de chancho con esta mezcla &#8211; si sobra un poco la puede guardar para rociar la piel durante el proceso del hornearse.<\/div><\/li><li id=\"wprm-recipe-10928-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Hornee la pierna de cerdo o chancho a 400F (200C) durante unos 30 minutos.<\/div><\/li><li id=\"wprm-recipe-10928-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Reduzca la temperatura a 325F(160F) y siga horneando durantes 3 horas. Si los jugos se empiezan a secar, caliente un poco de la cerveza adicional con un poco de la mezcla de mantequilla y achiote, agregue este liquido a la fuente de hornear. Use una brocha para pintar y rociar la parte de la piel con la mezcla de mantequilla y achiote. Dele la vuelta a la fuente de hornear de vez en cuando para que la pierna se hornee de forma uniforme  y si la piel se empieza a dorar demasiado puede cubrirla con papel aluminio (pero sin presionar la piel con el papel).<\/div><\/li><li id=\"wprm-recipe-10928-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Terminadas las primeras 3 horas, puede agregar las papas o patatas al horno (si tiene espacio).<\/div><\/li><li id=\"wprm-recipe-10928-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Contin\u00fae horneando la pierna a 325F(160C) durante unas 3.5 a 4 horas adicionales. El tiempo total de cocci\u00f3n para una pierna de chancho de 20 libras es casi 8 horas (se calculan 15-20 minutos por cada libra), la temperatura interna debe ser por lo menos 145 grados F (si tiene term\u00f3metro para medir la temperatura interna de la carne).<\/div><\/li><li id=\"wprm-recipe-10928-step-0-12\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Si cubri\u00f3 la pierna con papel aluminio, lo puede retirar durante los \u00faltimos 20-30 minutos para que la piel o cuero se ponga crocante.
