En lo personal, nunca he probado dos dulces de lechosa, iguales. Cada familia tiene su propia receta y saz\u00f3n. En este punto, te preguntar\u00e1s, \u00bfy por qu\u00e9 preparan tanto? La respuesta es una sola, para obsequiarlo, un frasquito con dulce de lechosa suele ser un bonito detalle navide\u00f1o, que se intercambia entre familias, y amigos. No s\u00e9 cuantos frasquitos llenos de esta gloria llegaron a mi casa en la infancia, pero sin duda fueron decenas. Para lograr esto es importante que tomes en cuenta los siguientes consejos, los cuales empiezan por la elecci\u00f3n correcta de la lechosa. Debes seleccionar un par de lechosas verdes, mientras mas verdes mejor, es imposible hacer esta receta con lechosa maduras o pintonas. El interior de la lechosa debe lucir blanco, casi en su totalidad. Este paso, para algunas personas era opcional, pero para mi abuela era la clave de toda la receta. Yo coincido con las abuelas, esta es la clave, aunque solo coincido en el \u201cque\u201d, no en el \u201ccomo\u201d. &nbsp;Para obtener una consistencia casi crujiente en el dulce, adem\u00e1s de usar lechosa muy verde, se debe deshidratar primero un poco la capa externa de las rebanadas de fruta. <\/p>\n\n\n\n<p>\u00bfY como se hace eso? Si esta pregunta la respondiera mi abuela, le dir\u00eda que debe poner las rebanadas de lechosa al sol por al menos seis horas. Ella las sol\u00eda colocar las rebanadas dispuestas uniformemente en una bandeja met\u00e1lica, luego tapaba la bandeja con una fina malla met\u00e1lica para evitar la visita de insectos, y colocaba la bandeja al sol. &nbsp;<\/p>\n\n\n\n<p>Si esto no era poco mimo, cuidaba la bandeja de manera sorprendente a lo largo del d\u00eda, movi\u00e9ndola de un lado a otro del patio de la casa, para obtener los mejores rayos de sol, hasta que la lechosa se deshidrataba. Yo en cambio, encontr\u00e9 una t\u00e9cnica r\u00e1pida e infalible. Coloco las rebanadas de lechosa en una bandeja met\u00e1lica, y las introduzco en el horno, a la m\u00ednima temperatura por un par de horas y obtengo casi el mismo resultado.
