Luego, yo misma me respond\u00eda, debe ser muy dif\u00edcil. Y empezaba nuevamente, es una torta enrollada, y \u00bfc\u00f3mo se enrolla una torta? -seguro se me rompe. Es un bizcocho de tipo genov\u00e9s. No contiene nada (o casi nada) de leche, mantequilla o aceite. Tiene una textura similar a una esponja, que lo hace moldeable.<\/li><li>El bizcocho se hornea en una bandeja o plancha muy bajita, de m\u00e1ximo 3 cm de altura. Puedes utilizar una bandeja para galletas. Luego de colocar la mezcla sobre la bandeja, se debe alisar con una esp\u00e1tula de reposter\u00eda para obtener un resultado m\u00e1s prolijo.<\/li><li>Para hacer el brazo gitano, necesitas suficiente papel encerado. Sino tienes papel encerado, puedes usar toallas de cocina (bien limpias).<\/li><li>La plancha fina, se desmolda caliente, jal\u00e1ndola por el papel y se enrolla inmediatamente. Para enrollarlo con m\u00e1s facilidad se agrega el alm\u00edbar.<\/li><li>La miel ayuda a que el bizcocho sea mucho m\u00e1s flexible. Procura usar miel pura de abejas.<\/li><li>La primera vez que se enrolla el bizcocho, es sin relleno, para que la plancha fina tome la forma, y se deja reposando as\u00ed al menos media hora. Luego se rellena.<\/li><li>Los brazos gitanos se rellenan con diferentes mezclas. Nosotros preferimos la crema de mantequilla para este postre, pero el chantilly, la crema pastelera, el merengue suizo, e incluso el dulce de leche, mermelada de guayaba o crema de chocolate funcionan a la perfecci\u00f3n.
