Y es que casi todos los asados venezolanos, son asados negros. En este punto, te estar\u00e1s preguntando, \u00bfPor qu\u00e9 le dicen negro? La respuesta es que este asado, adquiere su caracter\u00edstico color oscuro, al sellarlo con az\u00facar requemada. La carne se \u201cSofr\u00ede\u201d a fuego alto con un par de cucharadas de papel\u00f3n, o az\u00facar. El az\u00facar se quema, y se vuelve negra, perdiendo casi todo su dulzor. Es un corte de carne magra, duro, que se extrae de la secci\u00f3n gl\u00fatea del ganado.&nbsp; Para hacer un buen asado, necesitas un corte entero de aproximadamente un kilo y medio a dos. El primero es el marinado de la carne. Usualmente, marin\u00f3 la carne con los vegetales y condimentos la noche antes de preparar el asado. Aunque los restaurantes gourmet de Caracas, lo sirven acompa\u00f1ado de pure de batatas dulces.<\/p>\n\n\n\n<p>Nuestra receta es una adaptaci\u00f3n de la receta del famoso gastr\u00f3nomo venezolano, Don Armando Scannone, quien en su juventud se dedic\u00f3 a compilar un libro de recetas familiares venezolanas.
