Se estima que en la actualidad la consumen m\u00e1s de 800 millones de personas, siendo considerada como la tercera fuente m\u00e1s grande de carbohidratos en las zonas tropicales, luego del arroz y del ma\u00edz.<\/p>\n\n\n\n<p>Su \u00e9xito se debe al bajo costo y alto rendimiento en t\u00e9rminos de calor\u00edas. Su ausencia de gluten la convierte en un complemento ideal en la dieta de los celiacos.<\/p>\n\n\n\n<p>En los pa\u00edses como Venezuela, Colombia, Ecuador, entre<strong> <\/strong>otros, su consumo es tan extenso y variado que incluso a veces podr\u00edamos no darnos cuenta de que tanto la estamos usando. Por ejemplo, en Venezuela hacer una parrilla y no incluir yuca es algo inconcebible, su presencia es autom\u00e1tica, todos sabemos que un buen plato de parrilla debe llevar yuca. En harinas y almid\u00f3n, en forma de pan de yuca, arepas, tortillas, y muchas otras presentaciones.<\/p>\n\n\n\n<p>Su agradable color blanco le permite ser un acompa\u00f1ante que se adapta con comodidad a otros alimentos, incluso puede llegar a sustituir a la famosa y muy conocida papa o patata.<\/p>\n\n\n\n<p>En alguna ocasi\u00f3n cuando cierta cadena de comida r\u00e1pida tuvo serios problemas con su proveedor de papas para la elaboraci\u00f3n de papas fritas. En Venezuela estas \u00faltimas fueron sustituidas por las yucas fritas, que ven\u00edan incluso en el mismo contenedor original de las papas. Aunque esto pueda significar un recuerdo triste, la yuca ha estado siempre all\u00ed. Humilde y simple, pero al alcance de todos para que nadie se vaya a la cama con el est\u00f3mago vac\u00edo.<\/p>\n\n\n\n<p>Para m\u00ed, lo m\u00e1s destacable de este tub\u00e9rculo, es en primer lugar, lo f\u00e1cil que resulta pelarlo y en segundo lugar su preparaci\u00f3n, tan simple como hervirla y agregarle sal, ya permite obtener un plato para saciar el hambre. Pero no nos dejemos confundir con su simplicidad, porque hay muchas recetas y platos que se valen de la yuca.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><em>\u00bfC\u00f3mo elegir las yucas y cocinarlas?<\/em><\/strong><\/h2>\n\n\n\n<p>Las yucas son de los pocos tub\u00e9rculos que se venden cortados, porque las ra\u00edces de yuca suelen ser muy largas para venderse enteras. Sin embargo, esta cualidad permite a los compradores seleccionar mejor las yucas.<\/p>\n\n\n\n<p>Lo m\u00e1s importante es observar con atenci\u00f3n la parte blanca de la yuca. Esta debe lucir totalmente blanca, y sin ning\u00fan punto negro. Los puntos negros en la pulpa de las yucas indican que no est\u00e1n frescas, por lo cual al cocinarlas se tornaran amarillas y duras. Incluso, si ya las has comprado, debes descartar cualquier yuca que tenga muchos puntos negros.<\/p>\n\n\n\n<p>Otro truco consiste en jalar un trozo de la concha. Si se despega f\u00e1cilmente, estas ante una yuca fresca que resultara blanda y blanca al cocinarla. En las ocasiones que si se encuentra suele no ser de buena calidad, ya sea que est\u00e1n demasiado secas o con partes podridas. La mejor opci\u00f3n es buscarlas congeladas, normalmente se encuentran congeladas en las tiendas de productos latinos, asi\u00e1ticos, o africanos. Vienen en fundas congeladas, ya peladas y cortadas en trozos grandes.
