Nessa receita tradicional, o porco \u00e9 cozido em uma mistura de \u00e1gua, suco de laranja com cebola, alho e cominho, at\u00e9 que o l\u00edquido evapora e o porco doura na \u201cmapahuira\u201d, ou mistura de sua pr\u00f3pria gordura e temperos\/sabores absorvidos da cebola e do alho. A fritada \u00e9 um prato t\u00edpico da regi\u00e3o de Sierra, ou Terras Altas (Quito, Loja etc.). Apesar de seu nome completo ser \u201cfritada de chancho\u201d, que pode ser traduzida literalmente como \u201cfritada de porco\u201d, na realidade, a carne \u00e9 cozida em \u00e1gua e suco de laranja at\u00e9 que a \u00e1gua se reduza e a carne doure em sua pr\u00f3pria gordura.
